4 Ingredient Watermelon Salad

This is a super quick, easy and refreshing salad perfect for summer.
 
I don’t know about you all, but picnics can be DANGEROUS grounds for consuming a few too many calories.  I like to bring something safe as a dish to pass and this is a GREAT option.  PLUS it only takes a few minutes to put together, who wants to spend time in the kitchen when it is gorgeous outside?!?!
 
This recipe serves 4 but you could easily double or triple it.
 
4 cups cubed watermelon
6 Fresh mint leaves chopped
1-2 Limes juiced depending on how “zingy” you like it
1/3 cup crumbled goat cheese
 
Place in a bowl, stir a few times and DING you have a super refreshing summer salad!

Green POWER bowl

Recently Jeremy and I tried out CoreLife Eatery in Webster (which was phenomenal).  I ordered one of their power bowls and wanted to try to re-create it since I don't see myself driving to Webster everyday.  I think this is pretty close to it if I do say so:)


This is SO yummy and very filling.  A great lunch or dinner.   It may seem like "work" because it calls for making your own dressing.  I promise you I am a LAZY cook and it doesn't  ruffle my feathers :)   If something has many steps I AM OUT! 
This is also dairy and gluten free:)  You could make it vegan and omit the chicken.

The Dressing:
(4 servings)
1/2 cup cashews (I used unsalted)
Juice from 1 lime
Juice from 1/2 lemon
1 clove garlic
2 handfuls of fresh cilantro (great time to start growing your own)
6-8 tablespoons of water (depending on how thick you like it)

Mix in a blender (the Vitamix whips this up so fast)-  This is a ticker dressing but coats the power bowl...

Overnight Oats

Overnight Oats


Grab some mason jars and get ready to prepare your

weeks’ worth of breakfast.

These are so easy and yummy! There are about a billion recipes for this but I will share my favorite and easiest combination. Feel free to be creative and change it up to your liking. I usually make 5 at once and they last in the fridge for a week (at least I haven’t gotten sick yet from the week old ones!)

I do an assembly line style and it goes super quick. Then you have a grab and go breakfast for the rest of the week.

Recipe PER ONE JAR-

  • 1⁄2 cup oats (I don’t use the quick oats but I am sure they would work)

  • 1⁄4 cup of PLAIN Greek yogurt (if vegan just increase the almond milk)

  • 2 Tbsp. (12 grams) of Peanut butter powder

  • 1⁄4 tsp. (2 grams) of unsweetened cocoa powder

  • 1⁄2 small (50 grams) banana mashed

  • 1⁄2 cup unsweetened almond milk (or any milk will

    work)

  • 1 tsp. (5 grams) of honey or maple syrup

    Put it all in a mason jar...

EASY Avocado Tomatillo Dip

I love trying new things.  I grabbed some tomatillos at the public market because they looked fun.  Then I was like “what the heck do I do with these”.  I found this super simple recipes and it tastes SO good.  It feels like something from a restaurant that would make me pause and say YUM!  I like to cut up cucumber and tomatoes, and load this on top.   It is also good on top of grilled chicken or used like a salad dressing.  No cooking, just throw it all in your blender and done!

Avocado Tomatillo Dip
Ingredients
  • 2 large avocados
  • 5 tomatillos (green tomatoes)
  • 1/2 onion
  • 5 cloves fresh garlic
  • 1 jalapeño
  • Handful of fresh cilantro ( I only had dried at it tasted great)
  • 1 tsp. salt
  • 1 tsp. pepper
  • Zest & juice of 1 lime
Instructions
  1. Remove husks and stems from tomatillos
  2. Place all ingredients into your food processor or blender
  3. Process until smooth.
  4. Refrigerate leftovers in an airtight container (or in canning jars)

No Flour Chocolate Zucchini Muffins

Ingredients (for 9 muffins)

  • 1/2 cup (128 g) almond butter
  • 1 ripe medium-sized banana (100 g or 1/2 cup mashed)-(or applesauce)
  • 1 large egg
  • 1/8 cup (40 g) honey or maple syrup
  • 1/4 cup (20 g) unsweetened cocoa powder
  • 2 Tbsp. (14 g) ground flax-seed
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1 cup (100 g) zucchini, shredded and squeezed of excess liquid
  • 1/4 cup (60 g) chocolate chips
Instructions
  • Preheat oven to 375F and prepare a muffin pan by spraying 9 cavities with cooking spray. Set aside.
  • Add all ingredients except for zucchini and chocolate chips to a bowl and mix until batter is smooth and creamy. Stir in shredded zucchini and chocolate chips by hand.
  • Pour batter into prepared muffin pan, filling each cavity until it is about ¾ full.
  • Bake for 20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an airtight container for up to a week.

Lunch in under 2 minutes!

One of my favorite authors and speakers Jen Hatmaker posted this as her go to lunch. 
 
I have to be honest when I first read the ingredients I thought it sounded on the nasty side.  But like any devoted fan I decided to give it a whirl.  Man, I am glad I did because I LOVE THIS and eat it for lunch all the time!
 
I don’t have a fancy name for the title and am not feeling spunky to give it one, so we will call this-
 
LUNCH-just try it!
 
This serves one and literally takes me less than two minutes to make!
 
Ingredients-
½ Avocado or 50 grams
½ cup cottage cheese  *(I use full fat-live a little)
10 grams of cashews (or any nut, besides your husband or teen)
4 cherry tomatoes
1 tbsp. of balsamic glaze *(you can buy this or make it)
 
Layer these up in the order they are listed and DIG IN!
 
If you measure in grams this comes up at 300 calories.  Because of the fat level this keeps me pretty...

Vegetable Comfort Soup


This is just a really healthy soup that is loaded with good

stuff! It reminds me of a soup I ate when I first started my weight loss journey. It helped transition me into eating healthy again and have less cravings!

Ingredients:

1 Tbsp. olive oil

 

1 large onion, chopped

 

2 carrots, peeled and chopped

 

2 celery stalks, chopped

 

2 garlic cloves, minced

 

1 large sweet potato (about 2 cups), chopped

 

2 cups peeled butternut squash, chopped

 

2 cups cauliflower florets, chopped

 

2 cups sliced cabbage

 

1 28 oz. can diced tomatoes

 

6 cups vegetable stock

 

2 tsp. Italian seasoning (or a mixture of dried

parsley, basil, oregano etc.)

 

1/2 tsp. cracked black pepper

1 tsp. sea salt

 

2 Tbsp. freshly chopped parsley

Instructions:
Heat up a large pot over med-high heat and add olive oil.

 

Throw in onion, carrot and celery and cook for 3-5 minutes or until onions are translucent.

Quick and Easy Chicken Lettuce Wraps

5 Minute Avocado Chicken Lettuce Wraps

Serves: 1-2  (feel free to double and triple the recipe so you can have leftovers for lunches)
 
This was so incredibly easy to make and DELICIOUS!   Low in carbs and high in protein.  Its also gluten and dairy free!  I like to double up my romaine leaves per wrap so I am getting extra greens!  This would be super easy to pack for work lunch and I bet people would be envious!  You will have to hide it in a brown bag, put your name on it, strategically place it in the fridge and HOPE that no one will find it!
 
Ingredients
  • 4-6 romaine lettuce leaves
  • 1 medium avocado
  • ½ lemon or lime (for juice)
  • 1 cup cooked chicken, shredded or cubed
  • 1 roma tomato (or handful of grape tomatoes)
  • 2 tablespoons chopped onion (red, green, white…whatever you like!)
  • ¼ bell pepper, diced
  • Salt, pepper and garlic powder to taste.

Cabbage, Apple and Kale Salad

Anyone need little break from all the special treats about now?! 

This salad is fresh, crisp and delicious!  Whenever I look at a recipe I size up how long will it take me to make it.  I thought chopping the cabbage would be a total pain but it wasn't and went really fast!  It makes a large amount and lasts several days so I found it worth the small amount of time it took! 

Serves 8

 
Salad Ingredients:
2/3 head cabbage, thinly sliced and then chopped into short strips
2 small Granny Smith apples, peeled and chopped
5 cups baby kale, stems removed and washed if needed  (Aldis, Wegmans and BJ's carry this now)
1/2 cup dried cranberries
1/2 cup shelled pistachios (I have also used raw pumpkin seeds because pistachios are EXPENSIVE)

Dressing Ingredients:
3 T olive oil
2 T white balsamic vinegar (or use rice vinegar or another mild white vinegar if you don't have white balsamic)
1 T lemon juice OR the whole lemon if you like it “zingy”

Gingerbread Cookies

I don't "bake" much anymore because I am the one who primarily eats it!   During this time of year I get the itch to make cookies.  It brings back fond memories of being a little girl and helping my mom bake.  I want the same for my daughter without affecting my waist line TOO much!  This recipe is a healthier alternative to other cookies.  But by NO means am I saying this is a free for all and eat 10 of them:)  They are healthier calories but a calorie is still a calorie!

These do really taste like gingerbread and are fairly sweet so it does satisfy that sweet tooth craving.  Hope you enjoy!

INGREDIENTS

  • 1 ¼ cup pitted dates, packed
  • ¼ cup almond meal
  • 1 cup rolled oats
  • 1 tablespoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon nutmeg
  • ¼ teaspoon vanilla
  • ¼ teaspoon cloves

 

*Blend all ingredients, except for dates, in a high-speed blender or food processor until you get a fine consistency like flour.
