Green POWER bowl

Recently Jeremy and I tried out CoreLife Eatery in Webster (which was phenomenal).  I ordered one of their power bowls and wanted to try to re-create it since I don't see myself driving to Webster everyday.  I think this is pretty close to it if I do say so:)


This is SO yummy and very filling.  A great lunch or dinner.   It may seem like "work" because it calls for making your own dressing.  I promise you I am a LAZY cook and it doesn't  ruffle my feathers :)   If something has many steps I AM OUT! 
This is also dairy and gluten free:)  You could make it vegan and omit the chicken.

The Dressing:
(4 servings)
1/2 cup cashews (I used unsalted)
Juice from 1 lime
Juice from 1/2 lemon
1 clove garlic
2 handfuls of fresh cilantro (great time to start growing your own)
6-8 tablespoons of water (depending on how thick you like it)

Mix in a blender (the Vitamix whips this up so fast)-  This is a ticker dressing but coats the power bowl really well.


POWER BOWL-
(1 serving)
Finely chop 1 romaine heart or any "sturdy" lettuce you like (around two cups)
Finely chop 3-4 broccoli florets
1/2 cup shredded cabbage (I use the coleslaw mix)
1/2 cup rice noodles (my favorite) or brown rice
4 tablespoons (50g) or 1/4 of the dressing made above
3 oz. of cooked chopped chicken breast

Stir it all together and DIG in!  This makes a HUGE salad and comes in at 365 calories with 36 grams of protein!!

I like to cook up a big batch of chicken and rice noodles to keep in the fridge.  Then make a salad or two at a time and have more ready to make for the next day:)

Side note:  If you try corelife eatery, which I totally recommend, don't be fooled by the calorie counts on the menu.  They don't include the dressing in that number:)  So don't think you ate 230 calories for dinner and head to get a hot fudge sundae with extra nuts after...just sayin'
