No Bake Energy Bites

These are so good.  If you are one who is always grabbing an energy bar this is a great alternative that hasn't been processed and you can control the quality. 
 
I like that they are small, I find most bars are too many calories for what I need in the moment but somehow I finish the whole darn thing.  With that said WATCH OUT because the calories can add up quick with these.  
 
I often pop one before a workout when I am not fueled enough and don't want a lot of volume in my stomach.  
 
No Bake Energy Bites
 
Ingredients:
1/2 cup of almond or peanut butter
2 tsp. unsweetened coconut (optional)
1 cup old fashioned oats
1 Tbsp. Jam (any flavor)
1 Tbsp. chia seeds
1 Tbsp hemp hearts or seeds
1 tsp. vanilla extract (I have used maple and it was amazing too)
1/4 cup dark chocolate chips (optional)
 
In a bowl mix all ingredients together until well combined.

Sweet Potato Waffles

This was SO good and something out of the ordinary breakfast for us.  Try this on a slower weekend morning home when you don't have to rush out the door  or even dinner!  
 
Makes 4 large Waffles
Ingredients:
Waffles:
3 medium Sweet Potatoes grated
3 large eggs
1/2 tsp. cumin
1/4 tsp. smoked paprika
1/4 tsp. garlic powder or salt
 
Toppings:
Sauted Kale or baby spinach in a little oil with salt and pepper
Eggs- fried or scrambled
Avocado
 
Directions:
Heat a waffle Iron.
In a medium mixing bowl whisk 3 eggs and spices.  Then mix in grated sweet potatoes.
Spray heated waffle iron and add mixture to cover all quadrants.   Cook until outside is lightly golden and starts to crisp.  Ours took about 5 minutes.
 
Saute Kale or spinach while cooking waffle.
Slice avocado
Fry or scramble eggs.

Immune Booster Citrus Smoothie

Being preggo and having a kid in school instills a strong fear of getting sick!
 
This time of year I swear I can see germs in the air.  Here is a quick and healthy smoothie loaded in Vitamin C and tastes amazing.   
 
Immune Booster Citrus Smoothie
-Serves 3-
2 medium Navel Oranges (I add a little peel in too since that is LOADED with Vit C)
1 Large Banana
1 cup of frozen mango chunks (would be good with pineapple too)
2 cups unsweetened Almond Milk or Coconut milk
1/2 cup plain full fat yogurt
1 tsp ground ginger
 
BLEND AND ENJOY 
 
Close your eyes and pretend you are someplace warm and sunny while you are drinking it too!
 
 
P.S. This smoothie is NOT meant to be a meal replacement but to go along with a protein source.  If you drink this alone you most likely will be starving shortly after.

Stuffed Acorn Squash

Acorn Squash with sausage, apple and quinoa
 
2 acorn squash (cut in half. I did it width wise and almost sliced my left hand off. I'd suggest length wise.) 
 
I small onion, diced 
 
2 celery stalks, diced
 
1/2 # of sage sausage (you could easily substitute ground Turkey and add 1 Tbsp of rosemary or sage)
 
I small apple, diced
 
1 1/2 c. Of cooked quinoa
 
 
Cut the squash in half (I had potato squash which is a white acorn and used that. Try it-- so good!).
Brush with oil and a little salt and pepper. Cook at 400° for about 45 min or until soft.
Meanwhile cook onion and celery. After a few minutes add the ground meat you choose to use and an apple. Cook till... cooked. Haha! Take squash out of oven. Mix quinoa in with the meat mixture and spoon into squash. Top off with sprinkle of parmesan cheese if you like and cook at 400° for 20 min or so.

Pumpkin Spice Green Smoothie

This smoothie is Anna approved (our 6 year old).  We also shared this with our open house guests with lots of happy faces.  Even those who don't like "green" in smoothies really enjoyed it!
 
 
PUMPKIN SPICE GREEN SMOOTHIE:
1 ¼ Cups Unsweetened Almond Milk
2 Handfuls of Fresh baby Spinach
½ cup Pureed Pumpkin
1/2 cup Frozen Mango Chunks
1 Banana
2 Dates
2 TBSP. Hemp Hearts
½ Tsp. Vanilla Extract
½ Tsp. Pumpkin Pie Spice
 
Blend all together and ENJOY!
Serves 3

Chicken Enchilada Stuffed Spaghetti Squash

I found this SO good.  It really hit a comfort food feel and filled me right up!  
 
CHICKEN ENCHILADA STUFFED SPAGHETTI SQUASH
(serves 4)
 
INGREDIENTS:
  • 1 spaghetti squash
  • 1 1/2 cups cooked shredded chicken breast (I used left over rotisserie)
  • 1/2 cup green enchilada sauce
  • 1 green onion, thinly sliced
  • 4 ounce can diced green chiles
  • 1/2 cup frozen corn, defrosted
  • 1 tablespoon chopped cilantro (optional)
  • 1/4 cup plain  Greek yogurt
  • 1/2 cup shredded sharp cheddar or Monterey Jack cheese
DIRECTIONS:
Spaghetti Squash:
Either:
*Preheat oven to 400 degrees and line baking sheet with foil
*Cut the spaghetti squash in half lengthwise, spray the inside with cooking spray and sprinkle with salt and pepper.
Place the squash cut side down on the baking sheet and roast until tender, about 30-40 minutes.
OR-
 
Cut in half and throw in your instapot for 12-14 minutes -Pressure Cook setting
 
 
*Let the squash cool for about 10 minutes before...

Easy Warm Slaw Skillet

Try this quick and tasty dinner and make enough to pack in your lunch for the next couple days!
 
INGREDIENTS:
  • 2 lbs. Ground beef or turkey (your choice on meat)
  • 2 bags  Classic Cole Slaw Mix
  • 4 Green Onions
  • 3 tsp minced garlic 
  • 3 tbsp Amino Acids or Coconut amino's (you could use soy sauce)
  • 2 tbsp sesame oil
  • 2 tsp crushed red pepper flakes (optional)
  • 2 tsp ground ginger
INSTRUCTIONS:
Ground hamburger in pan as you normally would.
In separate pan I put sesame oil, soy sauce, chopped up green onion and chopped up garlic together and stir fried it until tender. I then added the cabbage  (cole slaw mix) , crushed red pepper and ground ginger and cooked until mostly tender, it still had a slight crunch to it which I prefer over super soft cabbage. Once that was done I drained the excess fat off of the hamburger or turkey and added it to the pan with the rest of the ingredients.  Stir together and Dinner is served :)

Cucumber Quinoa Salad

This is a quick summer salad to throw together for a picnic or to have on hand to go with your grilled veggies and/or protein.   It tastes fresh and lasts for several days in the fridge!
 
This is a great salad to bring to those picnics loaded with "treats".  It tastes amazing and is still healthy!
 
INGREDIENTS:
1 cucumber,  diced
2 cups of chilled cooked quinoa.  (if you have an instant quinoa cooks up great in that)
1/2 cup diced red onion
1/2 cup crumbled feta cheese
1/3 cup roughly chopped fresh basil 
 
VINAIGRETTE:
1/4 cup olive oil
2 tbsp or apple cider or red wine vinegar
Juice of one Lemon
1/2 tsp. Italian seasoning
pinch of salt and pepper
 
Toss all the ingredients together to combine in a large bowl.
Whisk all the vinaigrette ingredients.  Combine the vinaigrette with the ingredients.  Chill and ENJOY!

I scream..You scream...We all scream for ICE CREAM

I LOVE ICE CREAM.   If I had my choice I would daily walk around with a big old cone in my hand.  Ice cream is one of my favorite parts of summer and we have some good places around here #cheshirecreamery #pitsforddairy #sharks
 
BUT I do have a rational side to my brain that realized I probably shouldn't eat ice cream EVERY DAY (maybe just the real stuff once a week)
 
My want for ice cream has not lessoned so I have played around with some frozen banana recipes to suffice the "ice cream beast" within me.
 
Here are 3 versions but you could really play around with so many different combinations.
 
STRAWBERRY BANANA ICE CREAM
 
2 cubed frozen bananas
1/2 cup frozen strawberries
2 - 4 tbsp. coconut. milk
1/2 tsp. vanilla
 
 
PEANUT BUTTER ICE CREAM
 
2 cubed frozen bananas
2 tbsp. peanut butter
2-4 tbsp. coconut milk
*add 1 tbsp of cocoa powder if you want chocolate pb.
 
COFFE ICE CREAM
 
4 frozen cubed bananas
1/4-1/2 cup...

Tropical Smoothie

I LOVE this smoothie.  It's ingredients were inspired by a restaurant in Henrietta called B.Good.  I highly recommend that place if you are out shopping in that direction.  Lots of healthy and fresh choices on the menu.  
 
Jeremy and I shared this smoothie and it was a battle to share it.  We came home and recreated it pretty close :)
 
TROPICAL SMOOTHIE (serves 2):
1 orange peeled
1 kiwi peeled
1 cup frozen pineapple 
1 tsp of fresh ginger paste (I get this in the produce section of Wegman's)
1 cup coconut milk (in a can mixed well)
1 cup coconut water
 
BLEND and ENJOY!
 
You can add more ginger if you like that zing or none if you despise ginger and I am sure it would still taste amazing!  I am sure you could use fresh ginger as well, I just didn't have any when we made it.
